🥗 What is Abacha (African Salad)?

Abacha is a “no-cook” salad (once the cassava is processed) that is famous for its complex layers of flavor—savory, spicy, and slightly bitter.

  • The Base: Shredded cassava that has been boiled, sliced into thin strips, soaked overnight, and sun-dried.

  • The “Ncha” (Sauce): The soul of the dish is a thick, orange-yellow paste made by emulsifying Palm Oil with Potash (kaun) or a natural alternative.

  • The Ingredients: It is typically mixed with:

    • Ugba: Fermented African oil bean seeds (essential for authenticity).

    • Crayfish: Ground for umami depth.

    • Garden Eggs: Sliced fresh or the bitter leaves (Utazi).

    • Proteins: Usually served with fried fish (mackerel or tilapia), Kpomo (cow skin), or stockfish.
